HARVEST TIME

Augusts till October is a hot season on the vineyards in Portugal. Every day counts. Good timing to harvest grapes is essencial in production of hight quality wines.

Manual work to be done

Since winemaker takes a decision that grapes have necessary state of maturation to produce certain type of wine, harvesting works can be started.


HARVESTING EXPERIENCE

Are you curious how wine is made? You have a great opportunity to be a part of a team for one day and go through all main steps in wine making process.

You will start your day at vineyards with welcoming words of winemaker and explanations of security measures to be taken into consideration while harvesting grapes. Don't get surprised, you will be doing manual harvesting. We belive that manual harvesting can guaranty selection of best grapes.

Afterwards you will proceed to detailed explanation of winemaker where from comes color, tannins and aromas of the wine. Winemaker will explain what happens with the juice of the grape during fermentation on where from appears alcohol.

Then you will get back to practical part - you will need to extract juice and color of the grapes, by stamping them. Once again man-work will be applied. One more important aspect of this technique - not to smash grape grains that have a lot of essential oils, that would make wine bitter.

The great work will be done by this point. Now smashed grapes and extracted grape juice have to pass maceration for several hours or even several days (depending on pretended final result) and then start it fermentation process.

After great day of work it is time to enjoy a meal with great wines.
